Papaya Scones

Tasty and stays fresh for longer.

  • 3 cups of self raising flour
  • 1 cup very ripe papaya
  • ½ cup of sugar
  • 1 egg
  • 1 tablespoon of butter
  • Milk
  • Pinch of salt

Rub butter into flour and add a pinch of salt. Mix papaya and sugar in another bowl then add well beaten egg. Pour papaya mixture into flour and add sufficient milk to make a soft dough. Mix lightly and turn onto floured board and cut into scone shapes. Bake in a hot oven for 12-15 minutes or until golden brown.
